Erin Lee | Food Director
Erin started her food career with a summer camp kitchen job at the age of 14. Over the years, she gravitated towards jobs in coffee shops, health food store delis and restaurants. In 2010, she opened Cafe Solstice, and for 10 years served coffee, tea and lunch fare to Salt Lake City.
In 2016, Erin was approached by administrators from a new public Waldorf being built in the area, and they offered her the opportunity to create and run their federal lunch program. After a few years of running both the cafe and the school lunch kitchen, she decided to close her cafe and stick with the school, as it was clear that serving fresh, nutritious food to children within the federal guidelines was not only important, but challenging and rewarding.
In her down time, Erin enjoys pottery, reading, listening to music and podcasts, walking, hiking and taking care of houseplants.
